Harbourfront Chef's Table Dinner
The Harbourfront Chef's Table seats twelve people along a single slab of Quebec maple, close enough to the pass that you can hear the fish being finished over binchotan. The menu changes with what the boats bring in that morning. Chef Amara Osei walks every course herself, pours wine when the sommelier steps away, and never serves more than twelve covers in a night — because that is the only way the food stays honest.
The Chef's Table pairs dinner with optional wine flights and access to after-dinner gaming on the mezzanine floor. Guests must be 19 or older. Please set time and spend limits before you play and use the on-site self-exclusion tools if you need them.
What the table is
A kitchen you can lean into
This is not a restaurant with a chef's table attached. The counter is the restaurant. Everything else in the room is there to serve those twelve seats.
Open pass
You watch every plate leave the pass in real time. Chef Osei cooks, plates and talks you through the reasoning behind each course.
Boat-driven menu
We take delivery from the False Creek and Steveston boats at 6am. Whatever shows up in the crate is what you are eating that evening.
Cellar seats behind you
Two sommelier rotations work the room with a 420-label cellar. Ask for the back-vintage list — it is not printed.
The dining room was rebuilt in 2022 around a single counter cut from a 140-year-old maple that fell in the Fraser Valley. Seats are spaced wide enough that your elbows never touch your neighbour, and the room runs quieter than most fine dining — around 62 decibels at cover, so you can actually talk. The wine programme is led by head sommelier Théo Lambert, who buys small parcels from Okanagan and Willamette producers before anyone else contracts them. Expect eight or nine savoury courses, one cheese service, and a single dessert that changes weekly based on what the pastry team feels is working that month. Service starts sharply at 6:45pm and there is no second seating.

What the evening feels like
Two and a half hours that move faster than they should
Guests come expecting a dinner and leave having made three new friends at the counter. That is not an accident — we design for it.

Every tier gets the same menu and the same service. What changes is the wine programme, the extras and the timing of your evening.

All prices are per seat in Canadian dollars, before GST and gratuity. Buyouts require a 50 percent deposit and free cancellation up to seven days before the booking.
How the evening runs
The choreography behind a two and a half hour dinner
Every step below happens on schedule whether you notice it or not. That is the point.
Arrive by 6:30
Doors open at 6:30 for a welcome pour at the bar. Seats fill at 6:45 and the first course lands at 6:55.
Menu briefing
Chef Osei reads the room, describes the menu, and takes note of allergies and dislikes before anyone plates a single dish.
First four courses
Cold dishes and seafood served first, paired with the two lightest wines on the flight. Courses arrive roughly every 14 minutes.
Kitchen walkthrough
Between courses six and seven you stand up, walk the line, and watch the fire being set for the main.
Mains and cheese
Two heavier courses, a cheese service, and the dessert, after which the counter stays open for another 40 minutes of chat.
Optional mezzanine
Guests 19 and over can head upstairs to the mezzanine. Limits are agreed at the table before anyone plays.

Age restriction and responsible play
Guests must be 19 years of age or older to enter the mezzanine gaming floor connected to the Harbourfront Chef's Table. Dinner service itself is open to guests of all ages with parental supervision. Gaming on the mezzanine is entertainment, not a source of income, and Maxcasinolic does not offer gaming credit. If you or someone in your party is struggling with gambling, please speak with any team member — we will provide information on the BC Responsible and Problem Gambling Program without judgement and without cost. Voluntary self-exclusion can be set up on the spot with a floor manager. Setting a hard time or spend limit before you play is the single most useful thing you can do, and we encourage it for every guest.
